A few years ago, I had a major wakeup call when I went into acute kidney failure. Up until this time, I had been abusing my body both mentally and physically. Once I got in the habit of meal planning, my life changed in so many positive ways.  It saved me time and money, helped me eat healthy on a regular basis and made me a healthier and happier person.

So, ready to get started? Here is one of our most popular recipes from That Clean Life called Blueberry Overnight Oats. It is a great one to add to your meal plan! This recipe makes enough for 3 to 4 servings, so we love making this on a Sunday night to ensure we have some delicious, filling grab-and-go breakfasts prepared in advance for the week.

Blueberry Overnight Oats

This delicious & nutritious breakfast from ThatCleanLife can be prepared the night before, so that you can grab it on your way out the door and eat it after your morning workout or yoga class!

Ingredients

  • 1.5 cups whole rolled oats
  • 1.5 cups unsweetened almond milk
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ cup water
  • 1 cup fresh or frozen blueberries
  • 1 cup slivered almonds

Directions

  1. Combine oats, almond milk, chia seeds, maple syrup, cinnamon and water together in a large glass container. Stir well to mix.
  2. Seal and place in the fridge overnight (or for at least 4 hours).
  3. Remove oats from fridge. Use single-serving size mason jars (we like 250mL) and place a large spoonful of the oat mix in the bottom of each. Next add a layer of blueberries and top with a layer of slivered almonds. Repeat until all ingredients are used up.
  4. Store in the fridge until ready to eat. Enjoy them cold or heat them up.
