Strawberry-Rhubarb Chia Jam/Sauce

One of my wonderful Naturopathic Doctor friends made this recipe & brought it to a brunch with some of our ND friends in Toronto. We all loved it on its own or on top of homemade muffins or bread (gluten-free of course!). It would also be a delicious sweet addition to top coconut ice cream, paleo pancakes, or oatmeal!


  • 2 cups strawberries, stemmed
  • 1 cup chopped rhubarb
  • 4 Tbsp chia seeds
  • 2 Tbsp maple syrup
  • 3 Tbsp fresh lemon juice


  1. Blend all ingredients in a high-powered blender for 60 seconds. Use a spatula to transfer the mixture to a jar or bowl. Cover and let rest overnight to allow the chia to gel the mixture together.
